How to Sharpen a Whizard Knife
Maintaining a sharp blade is essential for the Whizard Knife’s optimal performance in trimming and defatting. Thanks to its user-friendly design, the Whizard Knife is simple to disassemble for cleaning, sharpening, and maintenance.
Bettcher’s 210 Universal Sharpener was made specifically for sharpening the Whizard Knife. Follow the instructions in the operating manual carefully.
Here’s a summary of the steps to keep your Whizard Knife sharp and effective:
Tools:
Bettcher Universal Blade Sharpener
Standard flat blade screwdriver
1. Attach the blade holder: be sure to follow the operating instructions provided with the tool carefully.
2. Attach the steeling device: replace the pin carefully.
3. Instal the blade into the blade holder: check that the inner surfaces are free from dirt and dust before placing the blade holder with gear teeth facing down.
Note: if the blade turns freely in the blade holder, it is excessively worn and needs replacing.
4. Position the grinder to sharpen the blade: Follow the instructions carefully to position the grinder. Back away the grinder as needed when raising into positions to avoid hitting the blade.
5. Sharpen the blade using the grinder wheel and grinder wheel surface: The grinder wheel does not require dressing of its grinding surfaces. Use the correct wheen and surface to sharpen the blade.
Slowly feed the grinder wheel at a constant rate into the blade until a continuous 360-degree spark is achieved.
6. Follow the model-specific instructions supplied to sharpen the blade.
7. Turn off blade motor switch and grinder motor switch.
8. Lower grinder carefully, taking care to to let it drop freely.
9. Remove blade
10. Check blae wear after sharpening, check the wear height of the blade using the gauge. If the blade passes through the gauge it should be discarded and replaced, it will not perform trimming applications effectively.
Regular sharpening, replacement of blades and maintenance, combined with the Whizard Knife’s easy disassembly design, help maintain hygiene, efficiency, and blade longevity in your meat processing operation.
